Okay, before we get to this omelet recipe, I have to discuss the elephant in the room. Omelet is spelled two different ways. I had to know that answer before I could move forward. Ha!

I had my amazing team over for dinner last night to celebrate Christmas. Everyone’s favorite food is Mexican, so I ordered out, yes, I ordered out. Sometimes that is what needs to happen–it is the holiday season.

Ingredients:

  • 1 tablespoon olive oil
  • 2-3 eggs (beaten together in a small bowl)
  • Leftover Mexican Fajitas
  • 1 bell pepper, diced (I happened to have one)
  • 1 jalapeño pepper, seeded and minced
  • Leftover salsa
  • Leftover cheese dip (or 1/2 cup shredded cheddar cheese, if there is no cheese dip)
  • Chives (optional)

Instructions:

1. Heat the olive oil in an 8-inch nonstick skillet over medium heat.
2. Add the diced bell pepper and jalapeño pepper to the skillet and sauté for about 2 minutes until softened.
3. Add the leftover Mexican fajitas to the skillet and cook for another 2 minutes.
4. Pour the beaten eggs into the skillet and stir to combine with the vegetables.
5. Allow the eggs to cook, stirring occasionally until they are almost set.
6. Add the salsa and cheese dip (or cheddar cheese) to the skillet and stir to combine.
7. Cook for another 2 minutes until the cheese is melted and the eggs are cooked through.

8. Fold the omelette in half
