Are you looking for an updated chili recipe that is full of flavor and EASY to make? This easy chicken chili recipe will not disappoint your friends and family. Plus you add everything like cream cheese, black beans, and a Ranch packet to a crock pot and wait for it to do its thing!
Cream Cheese Chicken Chili

Every Halloween I make a Cream Cheese Chicken Chili (also known as white chicken chili) in a crock pot for friends and family! It never disappoints. The ease and flavor make it a fan favorite for this home cook. I have tweaked the recipe to my liking- I can’t wait for you to try it! I always have to double the recipe!

No clean-up is also a must on Halloween. We are too busy making smores in our driveway for all the tricker-treaters, so don’t forget to buy crockpot liners! Game changer for sure!

Ingredients

Put in your crock pot liners- Check out these BPA-free liners

3 chicken breasts cut in half

1 can of black beans- drained and rinsed

1 can corn- do not drain

1 can rotel- do not drain

1 pack ranch seasoning packet

1/2 tsp. smoked paprika

1 Tsp. chili powder

1 tsp. onion powder

1 block of cream cheese cut into cubes

Instructions:

Put in crock pot liners – easy clean-up is a must

Place the 3 chicken breasts (that are cut in half) at the bottom of your crock pot

Pour on the can of corn and the can of Rotel (do not drain or rinse)

Pour on drained and rinsed can of black beans

Sprinkle all the seasoning: chili powder, onion powder, smoked paprika, and ranch packet. Stir well

Add the cubed cream cheese on top. No stirring is needed.

Put the lid on tight and cook on low for 6-8 hours.

After it’s done cooking simple shred the chicken and add the chicken back in your slow cooker. Stir well and serve. Check out what we serve it with below.

FAQs:

I don’t have smoked paprika. What can I sub in for it?

If you don’t have smoked paprika, you can substitute it with regular paprika It won’t have the same smoky flavor, but it will still add some color and flavor to your dish. You can also use one 1 tsp of cumin. (but please add it to your next grocery list!! Smoked Paprika is where it is at)

Do you have to cut the chicken in half?

No, but I find it much easier to shred when the pieces are smaller.

Can I use frozen chicken in a crock pot recipe?

Yes, you can use frozen chicken in a crock pot recipe. Just be sure to thaw the chicken before adding it to the crock pot.

What can I add to this creamy chicken recipe if it is too thick?

If your chili is too thick, you can add some chicken broth to get the consistency you want.

What if I don’t have rotel on hand?

If you don’t have rotel on hand, you can use another type of canned tomato. Just make sure to drain them well before using them. Also, you will not have the spice (green chilies) that are in rotel. If you want the spicy kick, add some!

Can you use rotisserie chicken and cook this chili on the stove?

Yes, you can! Everything is cooked and will just need heated until the cream cheese is melted and everything is warm.

Can you use low fat cream cheese?

Yes, you can! I have done this, and no one could tell! Shhh! 🙂

What do you serve with your white chicken chili?

We have a buffet of fun to add to our chili:

Fritos are a must! We put those in the bowl first then add the cream cheese chili on top.

Then we add sour cream, shredded cheddar cheese, and hot sauce.

One of my friends uses the Fritos as a spoon! Even easier clean up. ha!
